Chocolate Fudge Zucchini Loaf

Happy 4th of July! I have to admit, it is extremely strange to celebrate independence from the country in which I currently reside. But nonetheless, I will be celebrating my favorite way — with food!

If you know me at all, you know that I love baking. It’s my way of relieving stress. However, I am currently living in student housing, which means I have minimal equipment and space. It’s been a challenge for me to find easy, simple, cake recipes that are also vegan and as a result, I have ended up creating a number of my own. I don’t think vegan baking has to be any harder or more expensive than traditional baking, and I want to prove it! I’m planning on sharing the recipes I develop — they will be 100% vegan and will not involve any ingredients that you couldn’t find in a standard grocery store, or any expensive equipment. I don’t even own a mixer or food processor!
